Spiced Date and Walnut Muffins



Spiced Date and Walnut Muffins
1/2 cup chopped dates
1/2 cup boiling water
1/2 cup canola oil
1/2 cup milk
2 eggs

Dry ingredients:
1 cup flour
1 cup wholemeal flour
1/2 cup brown sugar, lightly packed
3 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
1/2 cup walnuts, chopped

Optional : cream cheese

Set oven at 200 C on fan bake with rack just below middle.

Cover chopped dates with boiling water and let it sit for 5 mins.
Mix dry ingredients together.

to the date and water, add oil, milk and eggs. Whisk to mix. Then add this to the dry ingredients. Don’t over mix.

Spoon half the mixture into 12 muffin cups. Put a teaspoon of cream cheese, if desired, and top with the rest of the mixture.

Bake 12 minutes.

I like the texture with the wholemeal flour in it and the cream cheese in the middle makes it moist.
